The malt house of Pivovar Ferdinand is one of only six floor malt houses in the Czech Republic and the only one of its kind, with no equivalent in Germany or Austria. Thanks to traditional methods, handcrafting, and careful selection of raw materials, Benešov malt is among the highest quality on the market.

Unique Floor-Malting Technology

A floor malt house is a traditional place where malt gains its characteristic quality through the natural germination of barley on malting floors (humna). Today, this method is rarely used because it is demanding in terms of space, time, and manual labor—but the resulting quality of the malt is incomparable to industrial production.

How Is Our Malt Made?

  1. Selection of Raw Materials – We purchase only the highest quality malting barley from local farmers.

  2. Steeping in Steep Tanks – The grains are soaked for 72 hours, preparing them for germination.

  3. Germination on Malting Floors – The process takes 4 to 5 days, during which the enzymes needed for brewing are activated.

  4. Kilning – The malt is dried at temperatures up to 85 °C, giving it its characteristic color, aroma, and flavor.

  5. Aging – The finished malt matures for 6 weeks before it is ready for brewing in the brewery.

Malt Production and Sales

The Ferdinand malt house produces 2,000 tons of malt annually, 25% of which is used for its own beer production. The rest is sold to smaller breweries in the Czech Republic and exported abroad, including to the renowned German malt house Weyermann, which distributes Benešov malt worldwide.
